Zucchini & Squash Casserole

6 cups cubed zucchini and yellow squash (i usually use 2 zucchini and 3 yellow squash)
1 cup grated carrots
1 large onion
Saute all of this in a pan with a little olive oil and salt and pepper until veggi's are tender.

2 boxes stove top stuffing mix
Cook to package directions and keep warm until needed.

1 stick (1/2 cup) butter, melted
1 can cream chicken soup
1 cup sour cream
Mix all together then add to the pan of cooked veggi's.

In a 13x9 inch pan, layer 1/2 of the stuffing, then vegtables then the remaing stuffing on top.
Serve immediately while still warm.

This recipe makes a 13x9 size and feeds my family of 7 with none left over.  You can cut it in half and use and 8x8 pan if you don't need to feed so many.
I love this in the fall when fresh vegtables are available, but its great anytime!
I also love this because you can make it without meat and it is still so filling.  Of course you can easily add cooked chicken or ham to it as well.
This is great in the summer because you don't have to turn on the oven!
